2 tbsp olive oil 1 onion (finely chopped) 3 cloves garlic (minced) 1 tsp paprika ½ tsp dried thyme ½ tsp dried rosemary 1 tsp salt ½ tsp black pepper 2 tomatoes (chopped) or 1 cup tomato puree 1 cup vegetable broth or water 2 cups white beans (cooked or canned, drained) 2 cups fresh spinach ¼ cup grated Parmesan cheese (optional) 1 tsp lemon juice Fresh parsley for garnish (optional) 1. Instructions:
In a large skillet, heat olive oil over medium heat.
Add the chopped onion and sauté for 3-4 minutes until soft and translucent. Then, add the minced garlic and cook for another minute.
Stir in paprika, thyme, rosemary, salt, and black pepper. Add chopped tomatoes or tomato puree and cook for 5 minutes.
Pour in the vegetable broth and add the white beans. Stir well and let it simmer for about 10 minutes.
Stir in the fresh spinach and cook for another 2-3 minutes until wilted.
Drizzle lemon juice over the dish and top with Parmesan cheese if desired.
Garnish with fresh parsley and serve warm with crusty bread or rice.
